Avocado Dressing

Green Goddess-y Goodness

'Last week I promised you an Avocado Dressing that goes especially well with refreshing salads loaded with purifying bitters like arugula, radicchio, spinach and radishes. This dressing provides prefect harmony thanks to what I call the Mary Poppins Principle, which holds that sweet balances bitter, as every good Nanny knows. “Just a spoon full of sugar helps the medicine go down… “

Avocado is not exactly the sugar Mary Poppins was referring to, but it is considered sweet according to Ayurveda. Its qualities are heavy, wet, cold and it is strengthening, tonifying, nourishing. In summer, when days heat up, Avocado has the cooling, hydrating affect your body seeks. Plus, it lovingly embraces those important bitters in your salad, tricking your body into wholeheartedly accepting these medicinal roots and shoots.'

Avocado Fudgesicles

'I really like to make my own blended fruit popsicles for the kids. Homemade popsicles can be made in a snap using fresh or frozen fruit, nut milks, water, or coconut milk. Plus, by using reusable popsicle molds, we cut down on unnecessary packaging and waste. Check your local co-op or just about any store at this time of year for popsicle molds. If you don't want to use plastic, then check out these stainless steel popsicle molds! I don't own any yet but if I were to purchase more I would go for these.'

'If you ask your friends if an avocado is a fruit or vegetable they may not know, but they’ll probably be able to tell you that avocados are high in fat. This fact about the mild-flavored green fruit (yes, avocados are fruits, or more specifically large berries) has given avocados a bad rap as a contributor to obesity, but is this really the case?

Avocados are a very healthy and nutritious food. They are rich in 13 vitamins (A, C, D, E, K, E and 8 types of B vitamins including B-6, B-12 and folate), and are packed full of other nutrients such as potassium, lutein, monosaturated fats and antioxidants. And since avocados can be eaten raw, baked, made into delicious dips and soups, or even blended into your morning green smoothie, avocados really are a tasty and versatile way to boost your health.'

Why Are Avocados Good For You?

Compelling Reasons to Eat Avocados

'Avocados contain oleic acid, a monounsaturated fat that may help to lower cholesterol. In one study of people with moderately high cholesterol levels, individuals who ate a diet high in avocados showed clear health improvements. After seven days on the diet that included avocados, they had significant decreases in total cholesterol and LDL cholesterol, along with an 11% increase in health promoting HDL cholesterol.

Avocados are a good source of potassium, a mineral that helps regulate blood pressure. Adequate intake of potassium can help to guard against circulatory diseases, like high blood pressure, heart disease or stroke. In fact, the U.S. Food and Drug Association has authorized a health claim that states: “Diets containing foods that are good sources of potassium and low in sodium may reduce the risk of high blood pressure and stroke.”'
