'I often see a lot of misconception surrounding vegetarianism from many people in the real food community and vice-versa. In my opinion the paleo/WAPF/traditional foods movements and vegetarians have a lot in common (see my article Not All Vegetarians Are Created Equal). 

So, I wanted to create this two part series on what a real food vegetarian eats. I’m starting off with a list of 5 “Vegetarian Foods” That I Never Eat and why. Editor's Note: Make sure all of your ingredients are organic. Organic, pastured, raw milk cheese is delicious and very healthy. Checkout the Homemade Ricotta cheese recipe(below) and substitute pastured raw, organic milk and raw cream.
If you decide to pair your vegetarian lasagna with a wine, consider this advice from NPR: 'Rich dishes such as vegetarian casserole, eggplant parmigiana, scalloped potatoes or spinach lasagna pair best with full-flavored whites or medium-bodied reds, such as chardonnay and merlot, which tend to be more supple and less tannic than cabernet and shiraz.'

'I was looking for a way to use the beautiful little eggplants I picked recently. The end of the growing season approaches and the glut of vegetables begs to be used up or frozen, or canned. I’ve got plenty of produce on my hands to use in main dishes.
This one is pretty simple – I’m making vegetable lasagna and substituting eggplant slices for the noodles. I am jazzing it up by using homemade ricotta - it’s simple, and rich.  The only things store bought for this dish are the mozzarella and olive oil. I love a self sufficient dinner!
Use whatever veggies you have on hand. Peppers, onions, spinach, carrots, zucchini, mushrooms are all good candidates. Got broccoli? Use it?'

Vegetarians Have a Lower Risk of Heart Attacks, Cancer, Stroke and Diabetes

'Vegetarians experience a 36 percent lower prevalence of metabolic syndrome than non-vegetarians, suggests new research from Loma Linda University published in the journal Diabetes Care. Because metabolic syndrome can be a precursor to heart disease, diabetes, and stroke, the findings indicate vegetarians may be at lower risk of developing these conditions.

A previous analysis of data from 52,700 men and women in the American Journal of Clinical Nutrition, found that those who did not eat meat had significantly fewer cancers overall than those who did.'
